A cleaver will come in handy to cut whole fowl into individual portions, a peeling knife for the more delicate fruits and vegetables.

When buying your knives it is important to consider that these are tools you will likely be using every day even if you are only in the kitchen once a day. A good set of knives can run you into the hundreds of dollars but if you divide that by a life time it really isn’t that much. The difference between good knives and not so good knives is there ability to hold a sharp edge and to stand up to every day use. A dull knife can be dangerous to your fingers; a dull blade is often the reason why a knife slips.
